dump it all in twice baked potatoes

Let’s just begin this blog by saying, I believe in the phrase ‘you only live once’ – so I’m not the type to ration off my butter consumption in hopes of adding an extra five minutes to my life so there will be white bread, there will be red beef and there will be carbs. So to start off I want to share this side dish that you probably have to run a marathon to burn off. Viva Potato!

Ingredients:
4 large russet potatoes
1/2 cup shredded cheddar
1 can cream of mushroom soup
2 tbs. chives or green onions
5 tbs butter
1/2 cup sour cream
1 tsp garlic salt
salt & pepper to taste

Scrub potatoes and place in an oven for 60 minutes at 400 degrees, poking holes half way through cooking. Remove from the oven and let cool for 5/10 minutes.

Then cut the tops off and scoop out the inside of the potatoes leaving enough potato in the shell so that it can stand up on it’s own. Place the inside of the potato in a bowl and add all ingredients and mash away. I rarely measure anything – so feel free to add/adjust all these ingredients to your taste. You can make creamier with milk/cream or switch up the cheese for a different taste. Once it’s mashed to your liking, lob it all back into the potato shell. Put back in the oven and bake for another 20-30 minutes at 400 until all is heated through. Voila!
