Saying adios to 2012 with my all time favorite I could live on you forever food – tacos, of course. I got the three recipes below from varying sources, but put them all together and it is one of my favorite meals.
Let’s start with the beans:

Ingredients:
2 tsp oil
2 minced jalepenos
2 medium onions
4-6 minced garlic cloves
4 14 oz cans black beans
1 12 oz beer (I used Modelo)
Cook the garlic and onion until translucent then add chopped jalepeno. Cook until tender – about 5 minutes. Add the beans – make sure 2 cans are drained and rinsed and 2 cans with juice, add 1/2 cup or so of beer. Bring to a boil then turn down to a simmer for 1 1/2 hours, adding beer consistently until the very end when the whole can/bottle has been dumped in – you just don’t want the beans to dry out. Add salt & pepper to taste when done.
Flank Steak Taco Recipe

Ingredients
1 2-3 pound flank steak
1/2 cup tequilla
1/2 cup fresh squeezed lime juice
1/4 cup olive oil
1 tbs ancho chili powder
salt & pepper
Mix all liquid and spice ingredients together and pour over steak to marinade for one hour. Cook on grill pan/grill for about 3-4 minutes per side for medium rare. Let rest and slice against the grain.
Then for the finishing touch! My husband stumbled across this sauce recipe on a blog that uses it for shrimp tacos – but it is perfect on this steak recipe also!
Creamy Lime Sauce Recipe

Ingredients
1/2 cup mayo
1/2 cup sour cream
handful of cilantro chopped
zest and juice of 1 lime
2 green onions sliced
1/4 tsp cayenne pepper
Just mix everything together and dollop on top of the finished tacos. We top ours with just the sauce, lettuce and green salsa, but really whatever you want!
