curry chicken salad
This probably shouldn’t even count as a recipe since you’re just throwing a bunch of stuff together and mixing, but remember I said I’d be easy on the fancy, heavy on the doable. I like to eat this straight or on crackers, but it makes a great sandwich or salad topper too. And yes, that’s white bread, live a little!
1 – 1 1/2 lbs cooked and chopped/shredded chicken
10 purple seedless grapes sliced in half
1/4 cup chopped celery
handful of sliced almonds
1/2 – 1 cup mayo (depending on your preference)
1 tbs curry powder (more or less depending on your preference)
salt & pepper
Just mix it all up and serve however you’d like! Give yourself enough time to cool the chicken down before serving.
