grandpa’s simple & delicious meatloaf

This is one of those recipes that I make when I need a little cheer-up via a familiar and comforting meal. This was originally my Grandpa’s recipe, and my mom made it pretty regularly, and now I’ve made it so many times I know the recipe by heart and never measure anything (but of course, I’ll attempt my best measurement estimates below). It’s hearty, quick, easy and awesome for leftovers. Viva la meatloaf!

Ingredients
*this makes 2 loafs like in the picture below, 1/2 the recipe for just one
2 lbs ground beef
2 eggs
1/3 cup chopped onion
1/3 cup chopped green pepper
1/3 cup chopped celery
1/3 cup ketchup + extra for drizzling over top
1/3 cup old fashioned oats
1 1/2 tsp salt
1 tsp ground pepper
1 tsp fresh thyme

Preheat oven to 350 degrees. Put all the ingredients in a large mixing bowl, mix well then form into loafs on a baking sheet.

Squirt some ketchup over the top, pop in the oven and bake for 1 hour. Let stand for a few minutes then slice and serve – it’s that easy! Serving with creamy mashed potatoes is obviously the best thing ever! Enjoy!
