heart meatloaf for valentine’s day

Nothing screams, “I love you honey,” more than a heart-shaped chunk of meat, am I right? So I made this recipe for Sir Dave as a little early V-Day surprise. Believe it or not, despite my meatloaf expertise he never seems very thrilled when meatloaf is on the menu. I know, WHAT?! But as soon as he takes a bite he starts oohing and aahing and says, “wow, this is really good” – then proceeds to clean his plate, get seconds, and eat all the leftovers the next day. So while I know meatloaf may not be the sexiest of foods, it is just darn good! 🙂 This is a new recipe filled with veggies that is very easy to make, and yes, Dave loved it!

Servings: 4
Cook Time: 1 hour

Ingredients
1 1/4 lbs ground beef
1/2 lb ground pork
1/2 cup chopped green pepper
1/2 cup chopped onion
1/3 cup chopped carrots
2 cloves minced garlic
1/2 cup breadcrumbs
1/4 cup cream
1 tbs worcestershire sauce
1 egg
2 tsp kosher salt
1 tsp fresh ground black pepper

Preheat the oven to 350 degrees. Place all of the ingredients into a large bowl and mix together – your hands are usually the best tools to do this. Place mixture onto a baking sheet and form into a heart shape. Pop the meatloaf in the oven and cook for 1 hour. Remove from the oven and impress your sweetie! Of course, as with most meatloaf, I like to dip in ketchup because I’m fancy.

  1. Many thanks for this recipe Annie. Living in Scotland, we don’t see or hear much about meatloaf (the food, not the singer) so I’ll be delighted to give your recipe a go. 😀

  2. As a confirmed lover of midwestern fare, I know I will love this meat loaf. The veggies inside and broccoli on the side help convince me I’m not sacrificing a healthy diet if I allow myself to be the true Nebraskan I am and indulge! Thanks for passing along the recipe.

  3. I love words but the sight of your meat loaf is saying much more than words may be able to describe. No wonder it is often said that one picture is worth more than a thousand words.
I trust that it will be as enjoyable as it looks.

  4. Oh man, I can’t believe you didn’t go full anatomy. It’s so obvious: broccoli floret brain, mashed potato omentum! Gaaah. Amateurs.

But ok. Grudging mad props for the meatloaf. Won MY heart 🙂

  5. We’re not really into meatloaf in a big way in the UK. We don’t see many recipes for meatloaf, and it isn’t sold in restaurants. So I’ll need a bit of convincing! Yours does look good though…..

  6. I made this as a special treat for my boyfriend and he said it was the best breakfast has ever had! I feel the same way.

  7. Wow, what a delicious recipe! I made this special recipe for my husband and he has given me a big surprise. Really glad making this. Thanks for the recipe.
