marinated mixed beans with herbs

I’ll be honest. I’ve been in a food rut. I’ve just been eating the same things over and over again, including frozen pizzas and taco bell. Don’t judge – life has been busy and I love me a good chalupa. But all the junk was catching up with me, so when I saw this presumably easy to make beans on bread situation in Bon appetite, I thought I’d give it a go with a few tweaks. Turns out, it’s pretty darn tasty and was handy to have around for a quick lunch or snack. Who knew – beans on bread, it’s a thing!

Ingredients
15 oz can of cannellini beans, rinsed + drained
1 shallot
3 tbs white wine vinegar
1/4 cup mint
1/4 cup parsley
1/3 cup olive oil
3 thinly sliced radishes
juice of 1/2 lemon
hearty Italian bread
salt + pepper

Finely chop the shallot and add to a bowl with the vinegar, let sit for 5 minutes. Next mix the chopped herbs in a bowl with the olive oil + lemon juice so that the herbs are well-coated. Add the beans, radishes and shallots to the herb mixture and toss gently to combine. Pile a hefty amount of the marinated beans onto a toasted piece of Italian bread, top with generous salt + pepper, and EAT. Easy peasy!

  1. A big family does not leave me much room for a food rut-LOL I make something (as a lunch) its tuna and white beans in a pita with seasonings and it is quite good Annie! Anyhooooooooooooooooo, looks great! Winner.

    This looks great. I like those little cannelloni beans and they are good with greens. This is a nice appetizer for guests.

    1. Sort of took a month off as work was getting really busy but currently on vacation in Scotland and heading to London tomorrow, then back home and boy do I have a lot to blog! So all is great on this end, hope your summer is rockin’ and rollin’ 😊
