spicy guacamole cheeseburger

It’s been awhile since I’ve posted something meaty + messy as my tagline proclaims, but that’s going to change given the amount of grilling and smoking of all the meats we’ve been up to lately. I’m also pretty sure that last night at our block party we agreed to dig a hole in our backyard and cook a whole pig…so there’s that.

First up, is a burg that is inspired by the “Feature” burger at the Green Door Tavern in Chicago. I’ve probably ordered it, oh, maybe 30 times over the years – so thought giving it a go at home was long overdue. Really simple to throw together, and quite tasty if I do say so myself!

Cook time: 20 minutes
Servings: 4

Ingredients
2 avocados
1 lime
1 garlic clove
2 tbs minced red onion
salt + pepper
1 sliced onion
2 tbs olive oil
4, 1/4 pound burgers
hamburger buns
4 slices of provolone
tortilla strips
hot sauce (my favorite is Trader Joe’s Chili Pepper Sauce, which I just learned is discontinued – WHAT!)

Start with making the guacamole. I’m sure we all have our favorite recipes so use what you like, but I have always liked mine pretty simple. I just add two ripe avocados to a bowl with the juice of one lime, a minced clove of garlic, red onion and a pinch of salt and pepper and mash it all up. Easy peasy.

Next up, slice one onion and saute with olive oil until nice and caramelized, about 20 minutes. In the meantime, get your burger patties ready. We stick with simple and just use ground beef with a good amount of salt + pepper.

Grill up the burgs to your desired doneness, topping with the provolone cheese. Then just layer up the guac, onions, tortilla strips and hot sauce and devour! Yummmmzzzzzz.

  1. I’m all about guacamole and put it with a burger and I’m in…
    I ordered a roast beef hoagie, yep I’m from Philly, and got guacomole on it instead of mayo or horseradish….hmm that just gave me an idea.
