crazy easy banana bread

Let it snow, let it snow, let it snoooooowwwwwww! We just had the first snow of the season in Chicago and I love it! People think I’m nuts but I love the cold too – it must be my Michigander roots. I think I’ll throw on Elf and start decorating the house today. It’s never too early for twinkly lights, right? 😀

Alrighty, let’s get to this yummy recipe. As much as I keep telling y’all that I’m not a baker, I feel like I just might finally be getting the hang of it. I had some over-ripe bananers so thought I’d give banana bread a go. I found this pretty simple recipe over at Genius Kitchen and loved how quick and easy it was to make – and also how tasty it turned out! I think next time I’ll throw in some chocolate chips and walnuts to take it up a notch. Maybe I’ll get real wild and add some coconut…okay, I’m already talking myself into making this again soon!

Ingredients
1/2 cup butter, softened
1 cup sugar
2 beaten eggs
4 smushed bananas
1 1/2 cups flour
1 tsp baking soda
1/2 tsp salt
1/2 tsp vanilla

Preheat the oven to 350 degrees. Then cream together the butter and sugar in a mixer, add the eggs and crushed bananas and mix until well combined. In a separate bowl, mix together the flour, baking soda and salt, then add to the banana mixture with the vanilla and mix until just combined. Pour this into a greased and floured loaf pan and bake for 55-60 minutes. Remove from the loaf pan and let cool for a bit before cutting into. Then eat up!

  1. I just made this same thing a few weeks ago and I was like wow, I never remembered how super quick and easy making banana bread was!! I mean it’s like no time at all and it’s one of my favorites! This sure looks good girl. And YAY snow!
