spicy chili lime cashews

I have had the MOST FAB time cooking this summer! I have so many recipes to share with you all, I can barely keep up with this whole ‘posting to the blog’ thing. 😀

We’ve been using a lot of fresh herbs and veggies from our garden (see first cucumber below – I’m like a proud mom), have been hitting up farmers markets and cooking a ton with our friends who live across the street who are fellow foodies (and quite good cooks)! I gotta say, life is pretty good when you’re mostly eating.

So, this here recipe was something I made when our pals (same from above) came over for a smoked goat taco night. I wanted to keep with the Latin flavor for a small snack and thought this sounded pretty yummy.

It ended up being a hit, so I’ll definitely come back to this recipe again. It’s easy to make and perfectly zesty with all the lime – great for summer.

Alright, let’s get to this recipe, shall we?

Cook Time: 1 hour
Yields: 2 cups

Ingredients
2 cups raw unsalted cashews
1/4 cup lime juice + extra 1/2 lime if needed
zest of 1 lime
2 tbsp chili powder
1 tsp cumin
1/2 tsp salt
1/8 tsp cayenne pepper (or just a pinch if you want less spice)
*1 tbsp honey – I didn’t use this in this first batch; but will next time – so it’s optional to include, but I like a little hint of sweetness

First, preheat the oven to 250 degrees. Next, whisk the lime juice, lime zest, chili powder, cumin, salt, cayenne, and honey (if using).

Toss the lime juice mixture with the cashews until they’re all nicely coated.

Line a baking sheet with a Silpat (I LOVE mine!), or oil the pan well. Spread the cashews onto the baking sheet, ensuring they are in a single layer.

Bake for 60 minutes, stirring every 20 minutes to ensure they’re not sticking and that they get evenly cooked.

Remove from the oven, and let cool for 10 minutes. Give ’em a taste and see if you need any seasoning adjustments like salt or additional lime juice. I added the juice of 1/2 a lime at the end and tossed together – gave it a nice zip!

Serve up to your friends and family – you won’t have any left!
