Happy Sunday all! I hope everyone is doing well, staying safe and cooking up a storm like we are.
Since the Illinois stay-at-home order was extended through May 30th, I’ve decided to pick up a few new hobbies in my ‘spare’ time to keep me positive and staying busy. I’m back on my Duolingo app lessons for Spanish (I’ll tell you right now, when it’s safe to travel I will be eating my weight in pastor in Mexico City), I’ve been using this Daily Yoga app to s-t-r-e-t-c-h and kick(!), and I even decided to do some old-timey flower pressing.
And of course – we’re cooking. A lot. So, on that note – I’m happy to be back sharing recipes and wanted to start with a new favorite.
There are a lot of versions of this out there, but we grabbed what we had in the cupboard and came up with the marinade below that ended up working fabulously. The salmon was buttery and tender and oh-so-flavorful. If you haven’t cooked with miso before (fermented paste made from soybeans), you gotta start. It may not sound very sexy, but it delivers a taste that is hard to beat – earthy, tangy, a tad sweet – we love it.
This is best grilled, so lucky for us, grilling season is upon us! I hope you guys give this easy peasy recipe a try – it’s tasty, quick and easy. Swish!
Prep Time: 35 Minutes
Cook Time: 10-12 Minutes
1 lb salmon
2 tbs miso
1 tsp rice wine vinegar
2 tsp soy sauce
1 tsp sesame oil
juice from 1/2 lemon
1/2 tsp salt
1/4 tsp fresh cracked pepper
1/4 cup chopped green onions
First, whisk all of the liquid ingredients & the salt and pepper together, including 1/8 cup of the green onions, reserving the rest for final garnish. Place the salmon in a baking dish and cover with the marinade. Cover and place in the fridge to marinate for 30 minutes, flipping the fish half way through to ensure both sides are getting the royal treatment.
Get the grill ready and hot while the salmon is marinating. The grill should be at high heat.
Next, remove the salmon from the marinade and cook on the grill – about 6 minutes on each side until your desired done-ness.
Serve with the remaining green onion as yummy garnish. Voila, quick and easy dinner.
