crunchy green seven-layer salad with thousand island

This is yet another recipe I grew up on and have been craving (likely due to the lack of sunshine and mountain of fried food we’ve been eating lately). It’s super easy to whip up and all the fresh crunchy fresh veggies will make you feel like summer can’t be that far off…

Ingredients:
Salad
1 1/2 cups spinach
handful of water chestnuts
shredded sharp cheddar
1/2 sliced green pepper
1/4 cup frozen peas, cooked & cooled
1-2 sliced green onion

Thousand Island Dressing
1/2 cup mayonnaise
3 tbs ketchup
2 tbs sweet relish
1 tsp ground pepper
1 tsp course salt

Not much direction needed here obviously! Just cook the peas ahead of time so they have time to cool off. Layer all the fresh ingredients and top with the creamy & tangy thousand island dressing. Voila! My mom’s original recipe had celery and bacon, which I just didn’t have on hand, but obviously bacon makes everything better so go for it if you’ve got some!
