sloppy joes

Whoa dudes, this is good. Really, really good. For some reason I’ve been fixated on finding a homemade Sloppy Joe recipe that doesn’t make me miss the nostalgic feels of a good ole’ can of Manwich. It’s a quest I’ve been on for some time and am happy to report back that I’ve finally found a delicious recipe that I will be making for all my future Sloppy Joe needs. The original recipe is from the Pioneer Woman, but I’ve made some tweaks to make it my all time favorite, bestest, most kick ass Sloppy Joe situation. Seriously, give this a go – it’s tangy, sweet, and has a spicy kick – I’m in love.

Prep Time: 5 Minutes
Cook Time: 25 Minutes
Servings: 8*
*I halved the recipe and it was perfect for Dave & I with leftovers

2 1/2 lbs ground beef
1 large diced green bell pepper
1 medium sized sweet onion, diced
1 1/2 cups ketchup
5 cloves minced garlic
2 tbs packed brown sugar
2 tsp chili powder, or more as needed
1 tsp dry mustard
1/2 tsp red pepper flakes
Salt and freshly ground black pepper
8 onion rolls

Start by browning the ground beef in a large pot over medium-high heat, then drain off the fat.

Next add in the chopped green peppers and onions and stir. Add 1 cup of water, the ketchup and the garlic. Stir to combine, then add the brown sugar, chili powder, dry mustard, red pepper flakes, salt and pepper to taste. Stir well, and then cover and simmer over medium-low heat, about 20 minutes.

Brown the onion rolls on a griddle until lightly toasted, then slap on a big heaping pile of the Sloppy Joe mix and eat!
