Woops! I can’t believe I let more than a month go by without posting a darn thing. Even though this wasn’t a scheduled blogger break, I’ve got to say it was nice to let myself take a breather from blogging so I could really enjoy summer and all the crazy (mostly fun) things that popped up along the way. Since I’ve been MIA I thought I’d share what I’ve been up to! And please forgive the varying sizes, tints and filters on all the photos; but these snaps really represent the wild, silly, crazy end of summer Sir Dave and I have had! There is, of course a recipe at the bottom, so keep on scrolling dudes! Good to be back!

…our best pals came and visited from Budapest! We visited them in April and always have the best damn time with them.

We got to visit Angry Crab, which was on my must-visit list for over a year. You basically pick a seafood, a seasoning, and a level of hotness and eat it out of a big plastic bag. My kinda eatin’!

…I also turned 35! I was so happy Dana & Shane (the above peeps) were in town for my birthday, so Dave and I had our first BBQ with them and some of my favorite folks. It was our first test drive of entertaining in the new house, and it was so much fun! Dave even smoked my favorite ribs (that recipe is up next, so stay tuned). Here’s a little photo Dana snapped of the gang.

…we also traveled to Maine for my father in-law’s memorial / celebration of life. Maine was beautiful, and even though the occasion was bittersweet, we sure did celebrate just the way Barry would have wanted us to – surrounded by family, lobster, sunsets on Great Moose Lake and cheap beer.

…and last we just celebrated our 10-year wedding anniversary by throwing a housewarming party in our new place. Dave and I were really, truly blown away by the friends – old and new – who came to celebrate with us. So much gratitude! And of course Ms. Jackie got us some pretty awesome T-Shirts considering our hashtag was #daves10thannieversay. 🙂

So, kind of a lot in a month, hey? But we’ve had a great time, and I’m excited to get back into writing this here bloggy blog. Thanks for sticking with me in my absence! Alright, onto the cooking!

When I was in Maine, my sister-in-law made what I think was overnight oats, then I saw a recipe on the plane home in Good Housekeeping (yes, that’s my jam) for the same thing. So I thought, why not give this a whirl? I ended up loving it and have made several super easy variations, here is my favorite version so far!

Ingredients
1/2 cup old fashioned oats
1 tbsp chia seeds
1 tbsp honey
1 tbsp shredded coconut
2/3 cup vanilla almond milk
1/4 cup fresh or thawed blueberries or chopped bananas

The night before, all you have to do is put all the ingredients (minus the fruit) in a 16oz mason jar, shake well, and scrape down the sides to make sure the honey is well mixed. Seal the jar for the night, and pop in the fridge. The next morning I top with fruit and devour!
