Nothing screams, “I love you honey,” more than a heart-shaped chunk of meat, am I right? So I made this recipe for Sir Dave as a little early V-Day surprise. Believe it or not, despite my meatloaf expertise he never seems very thrilled when meatloaf is on the menu. I know, WHAT?! But as soon as he takes a bite he starts oohing and aahing and says, “wow, this is really good” – then proceeds to clean his plate, get seconds, and eat all the leftovers the next day. So while I know meatloaf may not be the sexiest of foods, it is just darn good! 🙂 This is a new recipe filled with veggies that is very easy to make, and yes, Dave loved it!

Servings: 4
Cook Time: 1 hour

Ingredients
1 1/4 lbs ground beef
1/2 lb ground pork
1/2 cup chopped green pepper
1/2 cup chopped onion
1/3 cup chopped carrots
2 cloves minced garlic
1/2 cup breadcrumbs
1/4 cup cream
1 tbs worcestershire sauce
1 egg
2 tsp kosher salt
1 tsp fresh ground black pepper

Preheat the oven to 350 degrees. Place all of the ingredients into a large bowl and mix together – your hands are usually the best tools to do this. Place mixture onto a baking sheet and form into a heart shape. Pop the meatloaf in the oven and cook for 1 hour. Remove from the oven and impress your sweetie! Of course, as with most meatloaf, I like to dip in ketchup because I’m fancy.
