Fresh Tomato Pizza Sauce
A long roast on fresh tomatoes gives this sauce a lovely sweetness, perfect for pizza.

- 1 Lb Cherry Tomatoes, Sliced
- 1 Lb Slicing Tomatoes, Sliced
- 1/4 Cup Olive Oil
- 3 Cloves Garlic
- 1.5 Tsp Soy Sauce
- 1 Tsp Dried Oregano
- 1 Tsp Salt
- .5 Tsp Fresh Cracked Pepper
Preheat the oven to 375 degrees.
Clean and slice the tomatoes, removing the seeds from the larger tomatoes.
Add the tomatoes to a large oven-proof sauce pan.
Add the olive oil, garlic, soy sauce, oregano, salt and pepper and mix together.
Add a lid to the pan and pop into the oven.
Cook for 1.5 hours, then remove from the oven and let cool for 15 minutes.
Add the tomato mixture to a blender or food processor and blend until it's to your desired chunkiness or smoothness.
You can replace tomatoes with whatever you have on hand or whatever looks ripest at the store. I would just say if they are a large variety you should remove the seeds.
You can also substitute fresh tomatoes with canned San Marzano tomatoes if you prefer. You would need 28-32 oz.
