radish & garbanzo bean salad with feta
I am obsessed with the hummus that we get from Reza’s, one of my favorite Mediterranean restaurants in Chicago. Their hummus is the real deal – we embarrassingly order two vats of it every time we get take-out and it’s usually gone in a day or two. Okay, okay I’m rambling about hummus when this is a post about a salad. But damn, I really want some hummus now. ANYWAYS, they serve the yummy hummus with fresh, creamy feta and spicy, crunchy radishes that make for a delicious combo, so I thought why not dump all those things in a salad so I don’t OD on hummus. I made a real simple, peppery lemon dressing that made this a pretty fresh, tasty salad if I do say so myself – perfect for summer!
Ingredients:
spinach
garbanzo beans
feta cheese crumbles
thinly sliced radishes
thinly sliced cucumbers
Dressing
1/4 cup olive oil
juice of 1/2 lemon
pinch of salt & pinch of pepper
Not a lot of instruction here obviously! Just slice the radishes and cucumber really thin and add as much of the ingredients as you want to the spinach. Whisk the ingredients for the dressing together, I made mine really peppery, which I loved. Toss it all together and you’re done!
