delux chicken salad with nando peri peri sauce

I guess I’m on a kick of trying to recreate my favorite dishes from restaurants, because here’s another one! Delux Bar and Grill is close to where I work so I often venture over there for lunch – and I’d say at least 9 times out of 10 I order the Delux Salad. This is not your leaf and veggie run of the mill salad either. It has bacon, cheese, tortilla strips, fried buffalo chicken pieces and MORE tossed in creamy ranch. It’s a salad I actually crave, and let’s be real, this meatloaf lovin’ girl is not craving salads too often! I switched up the chicken by just using a cooked chicken breast tossed in Nando’s spicy sauce, but you could really do any hot sauce, buffalo sauce, or even a bbq sauce would be great.

Servings: 2

Ingredients
1 large cooled chopped chicken breast, cooked to 165 degrees
1/2 cup Nando Peri Peri sauce or Hot Sauce
1 chopped romaine heart
1 cup chopped cucumber
1 cup sliced cherry tomatoes
4 slices cooked and crumbled bacon
1/4 cup shredded colby jack cheese
1/4 cup sliced green onions
1/2 cup corn kernels
1/2 cup tortilla strips (the southwestern flavor are yummy in this salad if you can find them)
1/2 cup ranch dressing*

*if you want to make homemade ranch, my friend Debbie over at The Mountain Kitchen has a yummy recipe!

There are almost no directions here other than tossing everything together and enjoying! But I will say to coat the chicken easily in the hot sauce, I chop the chicken, and put it in a sealed Tupperware container with the hot sauce and shake.

  1. Awe, thanks for the shout out! I forgot about that recipe…lol! I love everything about this salad. I like the idea of a whole healthy meal in a bowl. Gonna try this!
