banana pineapple coconut smoothie

Sir Dave (and the rest of the world) has been on this smoothie kick thing for years. I tried to wait the trend out with my bacon, egg and cheese croissants – but I’m not going to lie, those green smoothies everybody is drinking started to look kind of refreshing. So I thought, what the hell, I’ll give this a go.

I love coconut milk and try to use it in any recipe I can, so this was a perfect fit. And yes, it’s green because I snuck some spinach in there per Dave’s direction and care about my lack of vegetable intake. πŸ˜€ He promised I wouldn’t taste it and he was right. It was pretty yummy, and I just might be hooked y’all!

Servings: 2

Ingredients
1 cup greek plain yogurt
2 bananas
1 cup coconut milk
3 slices pineapple (about 3/4 cup cut up)
1 1/2 cups packed spinach
1 tbs matcha powder

Throw all this good stuff in a blender, hit blend, and voila breakfast smoothie! I *barely* missed the bacon. πŸ˜€
