spinach & bacon quiche

Almost every time I share this quiche everyone asks for the recipe (and unless I double the recipe my husband gets grumpy) – both signs of a crowd pleaser. It’s quick and easy and has bacon in it – what more could you want?

Ingredients:
*I usually double this to make 2
6 large eggs, beaten
3/4 cup heavy cream
1 1/2 tsp salt and 1/2 tsp pepper
2 cups chopped fresh baby spinach, packed
6 slices bacon, cooked and crumbled
3/4 cups shredded swiss cheese
3/4 cups shredded cheddar cheese
1 (9-inch) refrigerated pie crust (I get deep dish)

Preheat the oven to 375 degrees. Cook and crumble the bacon. Combine the eggs, cream, salt, and pepper by whisking together. Then add the egg mixture to the chopped spinach, cooked and crumbled bacon and cheese. Ladel/pour the mixture into pie shells and bake for 35 to 45 minutes until the egg mixture is set and the top is golden. Cut into 6 wedges.

    1. it was! and i bet you could leave the bacon out and it would still be awesome – something about the swiss & cheddar makes it gooey and delicious! 🙂
