cheesy spinach artichoke dip

A dear friend of mine from college (hey Justin!) gave me this recipe over ten years ago and it’s so easy and yummy it has remained a staple go-to ever since. I asked Dave to get the ingredients from the store and he bought enough to make four of this recipe…so get ready friends, we’re going to dip town.


1 package softened cream cheese
3/4 cup sour cream
5 oz. shredded Parmesan cheese
1 frozen box spinach (thawed and drained!)
1 can chopped artichoke hearts
1 tsp red pepper flakes
1 tsp fresh ground pepper
1 tsp salt
crackers or blue corn tortilla chips (my favorite) for serving


Preheat oven to 350 degrees. De-thaw and drain spinach, add to bowl with all other ingredients and mix well. Place in oven and bake for about 30 minutes, stirring half way through. Give it a taste and add more salt/red pepper as needed. Serve to your happy and hungry guests!
