migas-style breakfast tacos

One food allowed on a desert island? Tacos. Major duh. I try to sneak tacos into as many meals as I can, so breakfast is a no-brainer. I first had Migas in Texas and they were unbelievable, so the hubster and I have been messing around with recipes ever since. The recipe we landed on below is really easy to make and we usually have all the ingredients in the house (what you don’t stock the shelf with refried beans in case of the zombie-apocalypse like me?) You can also add other ingredients like onions, peppers and tomatoes – just saute them first, then add eggs and cook all together if you want a veggie-loaded taco.

Ingredients:
1 tbs butter
6 eggs
1/2 cup milk
1/3 cup refried beans
handful of tortilla chips
shredded cheddar cheese
salsa
salt
pepper

Heat up fry pan to medium heat, melt 1 tbs butter in pan. Whisk eggs, milk, salt and pepper together in a small bowl and add to the pan. Add refried beans in spoonfulls, crunched up handfull of tortilla chips and a sprinkle of cheese to the eggs.

Cook this mixture like you would scrambled eggs until cooked to your liking. Spoon eggs into warmed tortillas, top with cheese and green salsa. Enjoy your taco-started-morning!
