one-pot rice, beef & veggie fiesta!

This is my go-to quick and easy weeknight dinner recipe. It’s yet another one of my mom’s classics! It’s hearty and flavorful and hello, it’s called FIESTA! This recipe makes awesome leftovers and it’s so easy to make, I often make it on a Sunday to take to work for lunch through the week. Easy peasy.

Ingredients
1 lb ground beef
1 chopped onion
28 oz diced tomatoes
14 oz corn
14 oz black beans
1 chopped green pepper
1 1/2 tbs chili powder
salt & pepper to taste
1 1/2 cup instant rice

Servings: 6
Time: 30 minutes

Heat a pot to medium-high heat and toss in the chopped onion and the ground beef, cook until brown, then drain.

Add the diced tomatoes (juice included), the black beans (rinsed), and the can of corn (include the water). Also add green pepper, chili powder, salt & pepper and mix will. Bring to a boil.

Add 1 1/2 cups of rice and stir. Cover and simmer for 5 minutes. Fluff rice, and serve!
