bbq bacon meatloaf

My BBQ sauce levels must have been running dangerously low because so far this week I’ve had BBQ pulled pork, BBQ chicken pizza and now this, BBQ meatloaf with bacon – and I don’t regret a bite. I haven’t posted a super meaty recipe in a bit so I had to come back with a bang, which I think I’ve done! I love bacon and obviously love meatloaf, but I’m not a fan of draping bacon over the meatloaf only to come out of the oven totally rubbery and kinda soggy. So crisping it up before hand and mixing it in was the ticket. This recipe is so simple and easy to adjust to your taste (add green peppers or celery if you want more veggies, or a dash of Worcestershire sauce for a tangier taste); but I’ve got to say we loved it just as is. Sir Dave liked it so much, he ate it for 3 days in a row, which says a lot! Give it a whirl and let me know what you think!

Ingredients
8 slices of bacon
2 lbs ground beef
1/2 large onion
1/2 cup garlic & herb breadcrumbs
2 eggs
1/4 cup sour cream
dash salt and pepper
bbq sauce (I swear by Sweet Baby Rays!)
*splash of beer if you happen to be drinking one at the time

Servings: 6-8
Prep: 10 minutes
Cook: 1 hour 10 minutes

Preheat the oven to 350 degrees. Cook the bacon until crisp, drain and set aside. Then add all of the ingredients together in a bowl and mix thoroughly. Oh also, I happened to be drinking a white IPA beer while making this meatloaf, so I threw a splash in. What’s that quote? “Beer – because life’s problems don’t get solved over white wine.” Aint that the truth! And it makes everything taste better too!

Form the meaty goodness into a meatloaf shape and place on a cooking sheet that has been sprayed with cooking spray.

Top with zig-zagged BBQ sauce (and really people, let’s not stray from Baby Rays)!

Put in the oven and cook for 1 hour and 10 minutes. Pull out and bask in the glory of it’s bbq-y glazed glory. Let sit for 5 minutes before slicing.

Of course serve with creamy mashed potatoes and a fresh crunchy veggie!
