turkey tostadas

Only one food allowed on a desert island? Sorry, master meatloaf it’s got to be anything involving a tortilla! My love affair with Mexican food is certainly no secret and this is definitely one of my favorite recipes to make (and eat)! It’s a little lighter than ground beef or steak but still turns out really flavorful and hearty. It’s great for a weeknight because it only takes 15 minutes to make so give it a try and let me know what you think!

Ingredients:
1/2 large sweet onion, chopped
1 lb ground ground turkey
1 can (15 oz) crushed crushed tomatoes
1 tbs chili powder
1 tbs cumin
1/2 tsp. kosher kosher salt
1/4 tsp. freshly ground black pepper
1 can (15 oz) of rinsed pinto beans
tostada shells
salsa, sour cream, avocado, tomato, lettuce queso fresco for topping

Heat a pan to medium-high heat and toss in the chopped onions and ground turkey. Cook turkey all the way through.

Then add the can of crushed tomatoes and spices, stir well.

Form a well in the middle of the mixture and add the rinsed pinto beans to the middle and smash with a fork.

Mix together until well combined, and taste for seasoning. Cook until heated through on medium-low heat, just another few minutes.

Then layer on your very favorite toppings and enjoy! I got this recipe from Jessica Seinfeld, but tweaked it a bit, original recipe here.
