burger patty melt with hot sriracha mayo

I’m posting yet another recipe from Southern Cooking’s Off the Eaten Path – seriously one of my favorite recipe collections! I saw a picture of this ridiculously messy, meaty, spicy, cheesy patty melt and HAD TO HAVE IT. It’s basically like a burger in the middle of a grilled cheese with creamy, amazing, magical, sriracha special sauce. You have to try this! This recipe is from Stinky & Coco’s Diner which is in Winchester, Kentucky – and I may be making a pilgrimage there soon to taste the original.

Ingredients
Burgers:
2 lb ground beef
2 tbsp vegetable oil
1 1/2 cups chopped onions
12 thick white bread slices
6 tbs butter
18 slices of american cheese
dill pickle slices

Hot Mayo:
1 cup mayonnaise
1/4 cup sriracha hot chili sauce
1 1/2 tbs lemon juice

To make the mayo, simply stir together the 3 ingredients in a small bowl – donezo!

For this crazy good burger, first shape ground beef into 6 patties, then cook 3 patties in 1 tbs hot oil in a large skillet over medium-high heat about 4 minutes on each side. Remove the 3 patties and repeat with the remaining 3 patties until all 6 are cooked to your desired temp. Remove the patties then saute the chopped onions in the hot drippings (BRILLIANT!) on medium-high heat for 8 minutes or until tender.

Next, liberally coat 1 side of each bread slice with butter, turn the bread slices over and liberally coat each bread slice with hot mayo.

Then layer the patty, 3 cheese slices, grilled onions and the pickles between bread slices, with the buttered sides facing out.

In a clean skillet over medium-high heat, grill the sandwiches, in batches until bread is golden brown and cheese is melted. Then you’re ready to eat this ooey-gooey, yummy burger!
