quick korean ground beef bowl
I’m back to snowy Chicago after a fantabulous trip to Puerto Rico! I can’t wait to tell you all about it in an upcoming post as it is an incredible place that was equal parts peaceful and equal parts PARTY – which is just what I needed. 🙂
Until then, let’s talk about this crazy easy Korean beef bowl I whipped up. I’ve been struggling with making something for dinner on weeknights that is quick and yummy. This was a great solution that can be made in about 15 minutes. BAM-DIGGITY.
I am super into the sweet + savory dishes lately, which this certainly fulfills – and with the heat from red pepper and the zip from ginger? Loved it.

Cook time: 15 Minutes
1 lb ground beef
5 garlic cloves
1/4 tsp ground ginger
1/4 tsp red pepper flakes
1/3 cup + 1 tbs soy sauce
1/4 cup brown sugar
salt + pepper to taste
2 cups cooked white rice, cooked according to package
cucumber + sliced green onions for serving
First, get the beef and minced garlic going in a large saute pan over medium heat and cook through until the meat is browned, about 8-10 minutes. While the meat is cooking, break apart as small as you can – this will help the beef really soak up the sauce.
Next add the ginger, red pepper flakes, soy sauce and brown sugar to a bowl and whisk together well. Pour this over the meat and turn heat to medium, stirring until the beef is well coated. Cook this for just another five minutes until the sauce is heated through. Taste and add salt + pepper as needed (you might not need any at all).
Serve over hot rice, topped with sliced green onions and a row of refreshing cucumbers on the side. Oh, and top this bad boy with some hot sauce too! Sriracha would be perfection, but really any hot sauce will likely rock on this dish. 🔥🔥🔥
